Curry Lentil Soup

  • coconut oil
    2 tbsp
  • curry powder

  • diced tomatoes

  • garlic (minced)
    8 cloves
  • ginger (peeled and finely chopped)

    Heat coconut oil in pan and sauté onion and red bell pepper until golden brown.

    Add garlic , ginger , curry powder , and red pepper flakes and cook until fragrant, about ⏱️ 2 minutes .

    Add lentils and cook for about ⏱️ 1 minute , stirring occasionally.

    Add diced tomatoes , about water , coconut milk , and season with salt and pepper to taste.

    Bring the mixture to a boil and reduce heat to simmer, stirring occasionally, until lentils are soft but not mushy, ⏱️ 20-25 minutes .
