Curry Lentil Soup

1Heat coconut oil in pan and sauté onion and red bell pepper until golden brown.coconut oil: 2 tbsp, onion: 1 (chopped), red bell pepper: 1 (chopped)

2Add garlic , ginger , curry powder , and red pepper flakes and cook until fragrant, about ⏱️ 2 minutes .garlic: 8 cloves (minced), ginger: 2 in (peeled and finely chopped), curry powder: 1 tbsp, red pepper flakes: 1/2 tsp

3Add lentils and cook for about ⏱️ 1 minute , stirring occasionally.lentils: 3/4 c

5Bring the mixture to a boil and reduce heat to simmer, stirring occasionally, until lentils are soft but not mushy, ⏱️ 20-25 minutes .
